Abstract

This course provides an introduction of microbiological theory and testing for identification. This course will review lab safety, beneficial and pathogenic microorganisms and how they may cause disease as foodborne pathogens.  Basic microbiological principles will be reviewed, including growth requirements, characteristics of microorganisms, isolation, culturing, and inspection and identification techniques.  Methods of microbial control will be reviewed, including a unit on pasteurization.
